Spicy Marinara Sauce

  • Olive Oil – 1 tbsp
  • Minced Garlic – 2 cloves
  • Crushed Tomatoes – 1 ½ cups (canned or fresh)
  • Red Chili Flakes – ½ tsp (adjust to taste)
  • Fresh Basil – 1 tbsp, chopped
  • Fresh Oregano – 1 tbsp, chopped

Instructions

  1. Prepare the Mushrooms: Clean the king oyster mushrooms thoroughly and slice them into ¼-inch thick rings to resemble calamari. Place the rings on a plate and set aside.
  2. Make the Batter and Coating: In one bowl, combine flour, garlic powder, paprika, half the salt, and pepper. In a separate bowl, whisk together aquafaba or plant-based milk. In a third bowl, place the panko breadcrumbs for the final coating.
  3. Coat the Mushroom Rings: Dip each mushroom ring first into the flour mixture, then into the wet aquafaba or plant milk, and finally coat with panko breadcrumbs. Arrange the coated rings on a tray to prepare for frying.
  4. Fry Until Golden and Crispy: Heat olive oil in a frying pan over medium heat. Fry the coated mushroom rings in batches for about 2 to 3 minutes per side, until golden and crispy. Remove and drain on paper towels to remove excess oil.
  5. Prepare the Spicy Marinara Sauce: In a saucepan, heat olive oil and sauté the minced garlic until fragrant. Add crushed tomatoes, red chili flakes, chopped basil and oregano, salt, and pepper. Simmer the sauce gently until it thickens slightly and flavors meld, about 10-15 minutes.
