  • 1 to 2 tablespoons olive oil (for brushing)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Dough: Roll out your pizza dough or puff pastry on a lightly floured surface into a rectangular shape roughly 1/4 inch thick for an even base to spread the filling.
  2. Spread the Pesto: Using a spoon or spatula, evenly spread a generous layer of fresh basil pesto over the dough, leaving a small border around the edges to help seal the rolls.
  3. Add the Cheese: Sprinkle shredded or sliced mozzarella evenly over the pesto, then finish with a light sprinkle of grated Parmesan cheese to add savory depth.
  4. Roll and Slice: Carefully roll the dough tightly from one long edge to the other, forming a log. Using a sharp knife, slice into 1 to 1.5-inch thick rolls. Place each roll cut side up on a parchment-lined baking sheet.
  5. Brush and Season: Lightly brush the tops with olive oil and season with salt and freshly ground black pepper to enhance flavor and achieve a golden crust.
  6. Bake: Bake in a preheated oven at 375°F (190°C) for 18-22 minutes or until golden brown and the cheese inside is bubbly and melted.

Notes

  • Use fresh pesto for the best flavor, but good-quality store-bought pesto works well too.
