Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts or thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Italian seasoning

Sauce

  • 2 Tbsp olive oil
  • 3 Tbsp butter
  • 4 fresh garlic cloves, minced
  • 1/2 cup freshly grated Parmesan cheese

Garnish

  • 2 Tbsp fresh parsley, chopped

Instructions

  1. Prepare the chicken: Pat the chicken dry with paper towels to ensure an even sear. Season both sides generously with salt, pepper, and Italian seasoning, laying the flavor foundation for the dish.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook for 4-5 minutes per side, or until golden brown, locking in juices and forming the base for the sauce.
  3. Make the garlic Parmesan sauce: Reduce heat to medium and add butter and freshly minced garlic to the pan. Stir constantly to avoid burning the garlic. Once fragrant, gradually add grated Parmesan cheese, stirring constantly until it melts and creates a creamy coating on the chicken.
  4. Finish cooking & garnish: Let the chicken simmer gently in the buttery Parmesan sauce for a few minutes until fully cooked through and tender. Remove from heat and sprinkle with freshly chopped parsley before serving.

Notes

  • Dry your chicken well before cooking to achieve a golden sear.
  • Do not overcrowd the pan; cook in batches if necessary to maintain heat.
  • Use freshly grated Parmesan for best melting and flavor.
  • Add garlic after searing and stir constantly to prevent burning.
  • Let the chicken rest for 5 minutes after cooking to redistribute juices and enhance tenderness.
