Ingredients

Scale

Dough Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 cup warm water (100-110°F)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian herb blend (oregano, basil, rosemary, thyme)

Cheese Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Optional Garnish

  • Fresh parsley for garnish

Instructions

  1. Prepare the dough: In a large mixing bowl, combine warm water and instant yeast. Let it sit for a few minutes until frothy to confirm the yeast is active. Then add olive oil, salt, garlic powder, Italian herbs, and flour slowly, stirring until a sticky dough forms.
  2. Knead the dough: Turn the dough onto a floured surface and knead for about 7-8 minutes until it’s smooth and elastic. This develops the gluten that gives the bread its chewy texture.
  3. First rise: Place the dough back into the bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm spot for 30 minutes or until it doubles in size. This fast rise is thanks to the instant yeast.
  4. Add cheese and form loaf: Gently fold shredded mozzarella into the risen dough, kneading lightly just enough to disperse the cheese without deflating the dough. Shape it into a loaf or round boule and place it on a baking sheet lined with parchment paper.
  5. Second rise and prepare for baking: Cover the dough again and let it rest for 10 minutes. During this time, preheat your oven to 400°F (200°C). Just before baking, sprinkle Parmesan cheese and extra Italian herbs on top for that perfect golden crust.
  6. Bake and cool: Bake for 20-25 minutes, or until the crust is golden and the bread sounds hollow when tapped. Remove from the oven and let cool slightly before slicing and serving.

Notes

  • Use water that’s about 100-110°F to activate yeast without killing it.
  • Knead enough to develop gluten, but keep the dough soft for a tender crumb.
  • Fold cheese gently to avoid uneven clumps inside the bread.
  • Use dried herbs for consistent flavor, but fresh herbs can be added for bursts of aroma.
  • Use a digital thermometer; bread is done when internal temp reaches 190-200°F.
