  • 1 tablespoon fresh thyme or parsley, chopped

For the Pastry

  • 1 sheet store-bought puff pastry (about 250g), thawed if frozen
  • 1 egg yolk, beaten with 1 tablespoon water (for egg wash)

Instructions

  1. Caramelize the Onions: Slice the onions thinly and slowly cook them in butter over low heat for about 25-30 minutes until they become golden and tender, developing a sweet, rich flavor essential for the rolls.
  2. Prepare the Sausage Filling: Add the minced garlic and sausage meat to the pan with the caramelized onions. Cook over medium heat until the sausage is browned and fully cooked, stirring occasionally. Stir in the mustard (if using) and fresh herbs, then remove from heat and let cool.
  3. Roll Out the Pastry: On a lightly floured surface, roll out the thawed puff pastry into a rectangle approximately 30cm x 40cm, ensuring even thickness for easy rolling.
  4. Assemble the Rolls: Spread the cooled sausage and onion mixture evenly over the pastry, leaving about a 1cm border around the edges. Roll the pastry tightly into a log shape, then cut into 8-10 individual portions.
  5. Apply Egg Wash and Bake: Place the rolls on a lined baking tray. Brush the tops generously with the egg wash to achieve a glossy, golden finish. Chill in the fridge for 10 minutes, then bake in a preheated oven at 200°C (390°F) for 20-25 minutes or until puffed up and golden brown.
