Instructions

  1. Prepare the Dough: Combine flour, sugar, salt, and baking powder in a large bowl. Cut in chilled butter until the mixture resembles coarse crumbs. Slowly add milk or cream and eggs, kneading gently to form a smooth dough. Wrap in plastic wrap and refrigerate for at least 1 hour.
  2. Make the Brownie Batter Filling: While the dough chills, whisk together cocoa powder, sugar, melted butter, eggs, and vanilla extract until thick and smooth. Stir in chocolate chips if desired. Set aside.
  3. Roll Out the Dough: On a floured surface, roll the dough into a large rectangle about ¼ inch thick. Use a sharp knife or pizza cutter to slice the dough into triangles suitable for shaping into croissants.
  4. Fill and Shape the Croissants: Place a spoonful of brownie batter at the wider end of each triangle. Carefully roll each triangle toward the tip, encasing the filling inside. Place shaped croissants on a parchment-lined baking sheet, leaving enough space for expansion.
  5. Proof and Bake: Let croissants proof in a warm spot for 30-45 minutes until slightly puffed. Bake in a preheated oven at 375°F (190°C) for 15-18 minutes or until golden brown and crisp. Let cool slightly before serving.
