Ingredients

Scale

Main Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 lb (450g) lean ground beef (90% lean recommended)
  • 1 cup cottage cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil, divided
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • Fresh parsley or cilantro, chopped, for garnish
  • Pinch of chili flakes or hot sauce for spice
  • Roasted bell peppers or spinach for additional veggies
  • Alternative cheeses: Greek yogurt or feta cheese instead of cottage cheese
  • Herbs variation: fresh basil or dill

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Peel and cube the sweet potatoes, then toss them with 1 tablespoon of olive oil, salt, and a pinch of paprika. Spread evenly on a baking sheet and roast for 20-25 minutes until golden and tender, tossing halfway through for even cooking.
  2. Cook the Ground Beef: While the sweet potatoes roast, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent. Add the ground beef, season with cumin, salt, and pepper, and cook until browned and cooked through, breaking it up with a spatula as it cooks.
  3. Assemble the Bowls: Divide the roasted sweet potatoes between serving bowls. Top each bowl with the seasoned ground beef and add generous scoops of cottage cheese. Garnish with fresh herbs if desired, and serve warm.

Notes

  • Prep in advance: Chop and roast sweet potatoes ahead of time to speed up dinner assembly later.
  • Use lean beef (90% lean) to reduce excess fat and keep the bowl light.
  • Don’t skip aromatics like onion and garlic—they elevate the flavor tremendously.
  • Adjust spices and seasoning gradually to balance flavors perfectly.
  • The creamy cottage cheese adds a nice texture contrast to the warm ingredients.
