  • 1 can (14.5 oz) diced tomatoes with juice

  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning (blend of cumin, chili powder, paprika, oregano)
  • 4 cups beef or chicken broth
  • Salt and pepper, to taste

Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium-high heat. Add ground beef, break it apart with a spatula, and cook until browned and no longer pink. Drain excess fat if desired for a lighter soup.
  2. Sauté Aromatics and Veggies: Add diced onions, minced garlic, and chopped bell peppers to the pot. Cook for about 4-5 minutes until softened and fragrant, stirring occasionally to prevent sticking.
  3. Add Beans, Corn, and Tomatoes: Drain and rinse black beans and corn, then add them along with the diced tomatoes and their juice to the pot. Stir to evenly distribute ingredients.
  4. Season and Pour Broth: Sprinkle in taco seasoning, salt, and pepper. Pour in beef or chicken broth and stir well. Bring to a gentle boil, reduce heat to low, and simmer for 15 minutes to blend flavors.
  5. Final Taste and Serve: Taste the soup and adjust seasoning if needed. Once hot and flavorful, ladle into bowls and add your favorite toppings such as sour cream, shredded cheese, cilantro, or avocado.
