  • 1 tablespoon olive oil (for sautéing spinach)

Instructions

  1. Prepare the Spinach: Wash and sauté the fresh spinach in 1 tablespoon olive oil with a pinch of salt over medium heat until it wilts and releases its moisture. Set aside to cool slightly.
  2. Mix the Meatball Ingredients: In a large bowl, combine ground chicken, cooled sautéed spinach, breadcrumbs, Parmesan cheese, Italian seasoning, minced garlic, salt, and pepper. Mix gently until just combined to keep the meatballs tender.
  3. Form the Meatballs: Shape the mixture into 1 to 1.5-inch meatballs using your hands or a scoop. Place them on a plate or tray, ready for cooking.
  4. Cook the Meatballs: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally until browned on all sides and cooked through (internal temperature 165°F).
  5. Prepare the Alfredo Sauce: In a saucepan, melt butter over medium heat. Whisk in heavy cream and Parmesan cheese, stirring until the sauce thickens and becomes smooth. Season with salt and pepper to taste.
  6. Combine Meatballs and Sauce: Add the cooked meatballs to the Alfredo sauce, spooning sauce over each to coat completely. Let them simmer together for a few minutes to meld the flavors.
