  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves

Instructions

  1. Prepare the broth: Char the sliced onion and fresh ginger in a dry pan over medium heat until lightly blackened to add smoky depth. Transfer to a pot with 4 cups of water, star anise, cinnamon sticks, and 2 tablespoons of fish sauce. Bring to a simmer and cook gently for at least 30 minutes to develop a rich, aromatic broth.
  2. Cook the noodles: While the broth simmers, soak or boil the rice noodles according to package directions until silky and tender. Drain well and set aside to prevent overcooking.
  3. Season the broth and add spice: Strain the broth to remove solids, then return the clear broth to the pot. Stir in chili paste or fresh chopped chilies, adjusting the amount to suit your desired spice level. Warm the broth through gently.
  4. Cook the shrimp: Poach the peeled shrimp in the simmering broth for 2-3 minutes until just pink and tender. Avoid overcooking to keep them juicy and fresh.
  5. Assemble the bowls: Divide the cooked noodles among serving bowls. Top with poached shrimp, then ladle hot broth over everything. Garnish with fresh bean sprouts, cilantro, basil, mint, and a squeeze of lime for a bright, fresh finish.
