Ingredients

Scale

Main Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Juice of 1 fresh lime

For Serving and Garnish

  • Tortilla strips, crisped just before serving
  • Fresh cilantro leaves
  • Avocado slices
  • Shredded cheese (cheddar or pepper jack)
  • Sour cream

Instructions

  1. Prepare your ingredients: Dice the onion and mince the garlic. Measure out all spices and canned goods. Decide whether to shred the chicken before or after cooking.
  2. Combine everything in the slow cooker: Layer the chicken, fire-roasted diced tomatoes, black beans, corn, diced onion, minced garlic, chili powder, cumin, smoked paprika, and chicken broth into the slow cooker. This will create a flavorful base for the soup to develop.
  3. Slow cook: Set the slow cooker to low and cook for 6 to 8 hours, or on high for 3 to 4 hours, allowing the chicken to become tender and the flavors to meld deeply.
  4. Shred the chicken and finish: Remove the chicken from the slow cooker and shred it finely using two forks. Return the shredded chicken to the soup and stir in fresh lime juice to brighten the flavor.
  5. Serve with tortilla strips and toppings: Ladle the soup into bowls and garnish generously with crispy tortilla strips, avocado slices, fresh cilantro, shredded cheese, and sour cream as desired for layered flavor and texture.

Notes

  • Use fire-roasted tomatoes for added subtle smokiness and depth in flavor.
  • Cook the soup on low heat to allow flavors to meld and keep chicken juicy and tender.
  • If using canned beans, add them midway or near the end of cooking to prevent mushiness.
  • Add fresh lime juice only at the end to preserve its bright acidity.
  • Crisp tortilla strips by baking or frying just before serving to keep them crunchy.
