Ingredients

Scale

Main Ingredients

  • 4 oz cream cheese, softened
  • 8 oz white chocolate, chopped
  • 1 teaspoon red food coloring (gel-based or paste preferred)
  • 2 tablespoons cocoa powder, sifted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, sifted

For Coating and Decoration

  • Sprinkles, cocoa powder, or crushed nuts for rolling and coating
  • Additional melted white or dark chocolate (optional, for dipping)

Instructions

  1. Prepare the Base Mixture: In a large bowl, mix the softened cream cheese and powdered sugar until smooth and creamy. Sift in the cocoa powder for even distribution. Add a few drops of red food coloring and vanilla extract, stirring gently to achieve the classic red velvet shade and balanced flavor.
  2. Melt the White Chocolate: Gently melt the white chocolate using a double boiler or microwave in short increments, stirring frequently to prevent burning. This melted chocolate will bind the mixture while adding sweetness without overpowering the cocoa undertones.
  3. Combine and Chill: Fold the melted white chocolate into the cream cheese mixture until fully incorporated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until firm enough to handle without sticking.
  4. Shape the Truffles: Using a small cookie scoop or spoon, scoop portions of the chilled mixture and quickly roll them between your palms into small, even balls. Arrange the shaped truffles on a parchment-lined tray.
  5. Coat and Decorate: Roll the truffles in cocoa powder, sprinkles, crushed nuts, or dip them in extra melted white or dark chocolate for a smooth finish. Place them back on the tray and chill until the coating sets completely.

Notes

  • Use room temperature cream cheese for a smooth, lump-free base.
  • Chill the mixture thoroughly to ensure it is firm and easy to shape.
  • Work quickly when rolling the truffles to prevent the mixture from warming and becoming sticky; dipping your hands in cold water can help.
  • Melt white chocolate gently to maintain a glossy, smooth texture ideal for coating.
  • Store truffles in an airtight container in the refrigerator to keep them fresh and moist.
