Instructions

  1. Prepare the Coconut Soak: In a shallow bowl, mix 200ml coconut milk or cream with a touch of sugar (about 1 tablespoon) and 1 teaspoon vanilla extract. Quickly dip each ladyfinger biscuit into this mixture, ensuring they soak briefly without becoming soggy.
  2. Whip the Cream and Mascarpone: Whip 300ml heavy cream until stiff peaks form. In a separate bowl, blend 250g mascarpone cheese with 40g sugar and 1 teaspoon vanilla extract until smooth and creamy. Gently fold the whipped cream into the mascarpone mixture to keep the texture light and airy.
  3. Add Coconut and Raffaello: Fold 100g shredded coconut into the mascarpone cream. Chop about half of the Raffaello candies and fold them in to add texture and flavor bursts throughout the mixture.
  4. Assemble the Layers: Arrange a layer of soaked ladyfinger biscuits at the bottom of your serving dish. Spread a generous layer of the mascarpone coconut cream over the biscuits. Repeat layers until all ingredients are used, finishing with a final layer of cream on top.
  5. Chill and Garnish: Refrigerate the tiramisu for at least 4 hours, preferably overnight, to let the flavors meld and the dessert set perfectly. Before serving, garnish with whole Raffaello candies, toasted shredded coconut, and toasted almonds if desired.
