Scale

Main Ingredients

  • 12 store-bought or homemade pierogies (potato and cheese filled)
  • 12 oz turkey sausage, sliced into bite-sized pieces
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Optional Garnishes

  • Fresh parsley or chives, chopped
  • Sour cream or Greek yogurt
  • Shredded cheddar or mozzarella cheese

Optional Variations

  • Red pepper flakes for heat
  • Zucchini, spinach, or kale for added vegetables
  • Smoked tofu or sautéed mushrooms (vegetarian sausage substitute)
  • Chicken or pork sausage as alternative proteins

Instructions

  1. Prepare Your Ingredients: Slice the turkey sausage into bite-sized pieces. Thinly slice the onion and bell peppers, and mince the garlic. If using frozen pierogies, thaw briefly or cook as directed on the package.
  2. Cook the Turkey Sausage: Heat a large skillet over medium heat and add olive oil or butter. Add the sausage pieces and cook for 6 to 8 minutes, flipping occasionally, until browned and cooked through. Remove and set aside.
  3. Sauté Vegetables and Garlic: In the same skillet, add more oil if needed. Add the sliced onion and bell peppers and sauté for 4 to 5 minutes until softened. Add minced garlic and stir for 1 minute until fragrant, careful not to burn.
  4. Cook the Pierogies: Add pierogies to the skillet with the vegetables. Cook for 2 to 3 minutes on each side until golden and crispy on the outside.
  5. Combine and Finish: Return the cooked turkey sausage to the skillet and gently mix everything. Season with salt, pepper, and fresh herbs if desired. Cook for an additional 2 minutes to meld flavors. Serve hot.

Notes

  • Cook on medium heat to ensure pierogies crisp up without burning and sausage cooks evenly.
  • Avoid overcrowding the pan to allow proper browning and crispy textures.
  • Thaw pierogies slightly for even cooking and crispier edges.
  • Adding fresh parsley or chives at the end brightens flavors.
  • Choose high-quality turkey sausage for best flavor balance.
  • Leftovers keep well refrigerated for up to 3 days or frozen for up to 2 months.
  • Reheat in a skillet over medium heat for best texture.
