Oven Baked Chicken Bites

Oven Baked Chicken Bites offer a healthy, delicious alternative to deep-fried snacks. These crispy, golden bites have a crunchy exterior and tender, juicy chicken inside, perfect for family dinners, snacks, or game day. Featuring simple pantry ingredients and quick prep, they deliver an irresistible combination of flavor and texture without excess oil.

Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces

Coating

  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Binding and Finishing

  • 2 large eggs, beaten
  • Olive oil spray, for coating and baking

Instructions

  1. Prep the Chicken: Cut the chicken breast into uniform bite-sized pieces to ensure even cooking. Pat dry with paper towels to help the coating adhere better and avoid sogginess.
  2. Prepare the Coating: In one bowl, beat the eggs thoroughly. In a second bowl, mix together the panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper to create the crispy outer shell.
  3. Coat the Chicken: Dip each chicken piece into the beaten eggs, letting any excess drip off, then coat thoroughly with the breadcrumb mixture. Press gently to ensure the coating sticks well, forming a crispy crust.
  4. Arrange and Bake: Place the coated chicken bites on a parchment-lined baking sheet or a lightly greased wire rack set over a baking sheet. Lightly spray with olive oil to encourage even browning. Bake in a preheated oven at 400°F (200°C) for 15-18 minutes, flipping halfway through to ensure even color and crunch.
  5. Check and Serve: Once golden, crispy on the outside, and cooked through (internal temperature reaches 165°F/74°C), remove from the oven. Allow the chicken bites to rest for a few minutes before serving.

Notes

  • Pat chicken dry before coating for better crust adhesion and crispiness.
  • Use a wire rack for baking to allow air circulation and even crisping.
  • Don’t overcrowd the baking surface to prevent steaming and soggy crusts.
  • For an extra thick crust, double dip the chicken in egg and breadcrumbs before baking.
  • Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for safe consumption.
