Instructions

  1. Brown the Beef: Cut the beef chuck roast into bite-sized pieces. Heat 1-2 tablespoons of oil in a large pot over medium-high heat. Brown the beef cubes in batches until they develop a rich, caramelized crust. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onions, minced garlic, celery, and carrots. Sauté until softened and fragrant, about 5-7 minutes, building the flavor base of the soup.
  3. Add Broth and Beef: Return the browned beef to the pot. Pour in the beef broth ensuring all ingredients are well covered. Bring to a gentle boil, then reduce to a simmer. Add bay leaves and thyme. Partially cover and simmer low and slow for 1.5 to 2 hours until the beef is tender.
  4. Incorporate Potatoes and Green Beans: Add the diced potatoes, green beans, and diced tomatoes to the pot. Continue simmering uncovered for about 30 minutes until vegetables are cooked but still slightly crisp.
  5. Season and Serve: Remove the bay leaves. Stir in fresh parsley and season with salt and pepper to taste. Adjust herbs as needed. Ladle the soup into bowls and enjoy warm.
