Ingredients

Scale

Base Ingredients

  • 1 1/2 cups rolled oats (use certified gluten-free oats for gluten-free version)
  • 1 cup fresh blueberries
  • 1/2 cup nut butter (almond or peanut butter; substitute with sunflower seed butter or tahini for nut-free)
  • 1/3 cup honey or maple syrup
  • 1 tablespoon chia seeds or flaxseeds
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/4 cup chopped nuts (optional)
  • 1/4 cup shredded coconut (optional)
  • Dark chocolate chips or melted chocolate for topping (optional)
  • 1 scoop protein powder (optional)

Instructions

  1. Prepare the wet ingredients: Gently warm the nut butter and honey together in a small saucepan over low heat until smooth and combined. Stir in the vanilla extract and set aside to cool slightly.
  2. Mix the dry ingredients: In a large bowl, combine rolled oats, chia or flaxseeds, and any optional add-ins like chopped nuts or shredded coconut. Carefully fold in the fresh blueberries, taking care not to crush them.
  3. Combine wet and dry mixtures: Pour the warmed honey-nut butter mixture over the dry ingredients. Fold everything together until well coated and sticky enough to hold the shape when pressed.
  4. Press into a baking pan: Line an 8×8-inch pan with parchment paper. Press the mixture firmly and evenly into the pan to create an even layer, using the back of a spatula or your hands for best results.
  5. Chill until firm: Place the pan in the refrigerator for at least 2 hours to let the bars set properly. Once firm, lift out of the pan using the parchment paper and cut into bars or squares.

Notes

  • Use fresh blueberries for better flavor and texture compared to frozen.
  • Press the mixture firmly into the pan to avoid crumbly bars.
  • Keep wet ingredients at room temperature to combine smoothly without overheating the fruit.
  • Chill the bars long enough to ensure they slice cleanly and hold together well.
  • Store bars in airtight containers to maintain freshness and prevent moisture.
  • Use a sharp knife to cut bars and wipe between cuts for cleaner edges.
