This family-friendly recipe is perfect for busy weeknights and can be customized with various noodle types and added veggies or spices for a comforting, flavorful meal.

Ingredients

Scale

Beef and Protein

  • 8 oz thinly sliced beef sirloin

Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger (or ground ginger)
  • 2 tbsp water (a splash)

Other Ingredients

  • 2 tbsp vegetable oil (for stir-frying)
  • 6 oz noodles (egg noodles, udon, or rice noodles; gluten-free if needed)
  • 2 green onions, sliced (for garnish)
  • Optional: chili flakes for heat

Instructions

  1. Prepare the Beef: Thinly slice the beef against the grain to ensure tenderness. Set aside while you prepare the sauce and noodles to allow quick cooking once combined.
  2. Mix the Sauce: In a small bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and a splash of water. Stir well until the sugar dissolves and the sauce is glossy and well blended.
  3. Cook the Noodles: Boil your choice of noodles according to package instructions until al dente. Drain and toss with a little vegetable oil to prevent sticking. Set aside.
  4. Stir-Fry the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Avoid overcrowding the pan; cook in batches if needed. Remove beef and set aside.
  5. Combine and Simmer: In the same skillet, pour the prepared sauce and bring to a gentle simmer. Let it thicken slightly. Return the beef to the pan and toss to coat evenly with the sauce.
  6. Toss with Noodles and Serve: Add the cooked noodles to the skillet, gently tossing to fully coat them with the savory sauce and beef. Garnish with sliced green onions and optionally sprinkle chili flakes or toasted sesame seeds. Serve hot.

Notes

  • Partially freeze beef before slicing to achieve thin, even strips.
  • Cook beef in batches to avoid overcrowding and ensure proper browning.
  • Adjust the amount of brown sugar to balance sweetness to your taste.
  • Coat beef lightly with cornstarch before cooking for a silky sauce and to lock in juices.
  • Rest cooked beef briefly off the heat to keep it tender.
