Ingredients

Scale

Meatballs

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for browning)

Sauce

  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground chicken, grated Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined to maintain tender, juicy meatballs.
  2. Form and Brown the Meatballs: Shape the mixture into 1.5-inch diameter meatballs. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides for about 5-6 minutes until golden crust forms.
  3. Prepare the Sauce: Remove meatballs from the skillet. Add sun-dried tomatoes and minced garlic to the pan and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, stir in red pepper flakes, and bring to a gentle simmer.
  4. Simmer Meatballs in Sauce: Return the browned meatballs to the skillet, coating them with the creamy sauce. Cover and simmer gently for 15 minutes to cook through and develop flavors.
  5. Finish with Fresh Herbs: Stir in chopped fresh basil just before serving for a fresh herbal aroma and brightened flavor.

Notes

  • Use fresh garlic, basil, and sun-dried tomatoes for best flavor.
  • Do not overmix the meatball mixture to keep them tender.
  • Browning the meatballs well locks in flavor and adds texture.
  • Simmer on low heat to prevent drying out the meatballs.
  • Taste and adjust seasoning after cooking the sauce.
