Ingredients

Scale

Shrimp and Orzo

  • 1 lb peeled and deveined shrimp
  • 1 cup orzo pasta
  • 2 cups chicken broth (plus splash for sauce)

Flavorings and Sauce

  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional), to taste

Finishing Touches

  • 1/4 cup fresh parsley or basil, chopped
  • Parmesan cheese, freshly grated (optional)

Instructions

  1. Prepare the Orzo: Cook the orzo in simmering chicken broth according to package instructions until tender but firm. Drain any excess liquid and keep the orzo warm for later.
  2. Sauté the Shrimp: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Add the shrimp, season lightly with salt and pepper, and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside.
  3. Make the Lemon Sauce: In the same skillet, add a splash of chicken broth, lemon juice, and lemon zest. Simmer for 1-2 minutes, scraping up any browned bits left from the shrimp.
  4. Combine Everything: Return the shrimp to the skillet, add the cooked orzo and chopped fresh herbs. Stir well to combine and warm through. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
  5. Finish and Serve: Sprinkle with freshly grated Parmesan cheese if using, toss once more, and serve immediately for a fresh burst of lemony flavor.

Notes

  • Use fresh lemon juice and zest for the best flavor; bottled lemon juice is less vibrant.
  • Do not overcook shrimp to keep them tender; remove once pink and opaque.
  • Optionally, stir in a splash of cream or butter at the end for extra richness.
  • Keep chicken broth warm when cooking orzo to enhance flavor and texture.
  • Add fresh herbs at the end to brighten the dish with a fresh green note.
