  • 4 tablespoons butter, softened

Herb & Garlic Swirl Filling

  • 68 cloves roasted garlic (soft and fragrant)
  • 2 tablespoons fresh herbs (like rosemary, thyme, or parsley), chopped
  • 2 tablespoons olive oil
  • Pinch of salt

Instructions

  1. Prepare the Dough: Combine warm water, sugar, and yeast in a large bowl and let it activate for about 5 minutes until foamy. Then add the all-purpose flour, salt, and softened butter, mixing until a soft dough forms. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  2. Let Dough Rise: Place the dough in a greased bowl, cover with a damp cloth, and leave it to rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Make the Herb & Garlic Filling: While the dough rises, roast the garlic until soft and fragrant. Mix the roasted garlic, chopped fresh herbs, olive oil, and a pinch of salt into a smooth paste ready to swirl through the dough.
  4. Roll and Fill the Dough: Once risen, roll the dough into a large rectangle. Spread the herb and garlic mixture evenly over the surface, then gently roll the dough from one long side to create a log shape.
  5. Form the Rolls: Slice the log into even pieces and place them cut side up in a greased baking dish, allowing space for final rising.
  6. Final Proof and Bake: Cover the rolls loosely with plastic wrap and let them rise again until puffy, about 30-40 minutes. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until golden brown and aromatic.

  • Use water that’s warm but not hot to avoid killing the yeast.
