  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Pat dry the beef chuck cubes, season lightly with salt and pepper, and brown in batches until well caramelized. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add chopped onion, garlic, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened and fragrant, scraping up browned bits left from the beef for added flavor.
  3. Add Liquids and Herbs: Return the browned beef to the pot. Pour in beef broth and canned tomatoes with their juice. Add bay leaves and the dried Italian herbs (basil, oregano, thyme), then season with salt and pepper. Stir to combine and bring the mixture to a gentle boil.
  4. Simmer Until Tender: Reduce heat to low, cover the pot, and let the soup simmer for 1.5 to 2 hours until the beef is tender and flavors meld beautifully.
  5. Final Seasoning and Serve: Remove bay leaves, taste, and adjust seasoning if needed. Ladle the soup into bowls and serve hot, garnished with your choice of Parmesan, chopped parsley, or a drizzle of extra virgin olive oil.
