Main Ingredients
- 1–1.5 lbs pork shoulder, cut into bite-sized pieces
- 4–6 fresh green chiles (or 1 can roasted green chiles), roasted, peeled and chopped
- 2 medium onions, diced
- 3–4 garlic cloves, minced
- 3–4 medium potatoes (Yukon Gold or russet), peeled and chopped
- 6 cups chicken broth
- 2 tbsp olive oil
Seasonings
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- Prepare the Chiles and Pork: Roast the green chiles under a broiler or on a grill until the skins are charred. Peel off the skins and chop the chiles. Cut pork shoulder into bite-sized pieces and season generously with salt and pepper.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onions and minced garlic. Cook until fragrant and translucent, building a flavorful base for the stew.
- Brown the Pork: Add the pork pieces to the pot and brown on all sides to seal in juices and add depth to the flavor.
- Add Potatoes, Chiles, and Broth: Stir in the chopped potatoes and roasted green chiles. Pour in the chicken broth, just enough to cover the ingredients. Sprinkle in cumin, oregano, and additional salt and pepper to taste.
- Simmer Until Tender: Bring the stew to a boil, then reduce heat to low. Cover the pot and let simmer gently for about 1.5 to 2 hours, or until the pork is fork-tender and the potatoes have softened.
- Final Taste and Adjustments: Taste the stew before serving and adjust seasonings if needed. For a richer stew, stir in a splash of cream or garnish with fresh cilantro or cheese as desired.
Notes
- Roasting your own green chiles enhances their smoky flavor, key to the stew’s signature taste.
- Browning the pork before simmering adds caramelization and deepens the stew’s richness.
- Use starchy potatoes like Yukon Gold or russet to naturally thicken the stew.
- Simmer the stew low and slow to ensure tender meat and melded flavors.
- This stew tastes even better the next day, making it great for leftovers and meal prep.
