Instructions

  1. Prepare the Chicken: Pat the chicken dry with paper towels to ensure crisp skin. Mince the fresh garlic and finely chop the herbs. In a bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper. Coat the chicken pieces evenly in the mixture, then set aside to marinate for 10-15 minutes.
  2. Prep the Carrots: Peel and cut the carrots into evenly sized sticks or rounds for consistent roasting. Toss them with olive oil, a pinch of salt, and some of the leftover herb mixture. Arrange the carrots on a baking sheet alongside the chicken, spacing everything to allow heat circulation.
  3. Roast Everything Together: Preheat the oven to 400°F (200°C). Roast the chicken and carrots on a single pan for 20-25 minutes, turning the carrots halfway through. Check that the chicken reaches an internal temperature of 165°F (75°C) to ensure it is fully cooked.
  4. Add the Final Touches: Once cooked, squeeze fresh lemon juice over the chicken and carrots if desired. Sprinkle with chopped parsley for brightness and a fresh pop of color before serving.
