Ingredients

Scale

Steak

  • 1 to pounds ribeye, sirloin, or filet mignon steak

Garlic Butter

  • 34 fresh garlic cloves, crushed
  • 2 tablespoons unsalted butter

Parmesan Cream Sauce

  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Seasonings & Herbs

  • Salt, to taste
  • Black pepper, to taste
  • 12 tablespoons fresh parsley or thyme, chopped

Instructions

  1. Prepare the Steak: Pat the steak dry with paper towels. Season generously on both sides with salt and black pepper to ensure a flavorful crust and to lock in the juices during cooking.
  2. Sear the Steak: Heat a heavy skillet over medium-high heat. Add the butter and crushed garlic cloves, allowing them to sizzle and infuse the butter. Place the steak in the pan and sear for 3 to 4 minutes on each side, depending on thickness, until a beautiful brown crust forms and the steak reaches your desired level of doneness.
  3. Make the Parmesan Cream Sauce: Remove the steak from the pan and set aside to rest. Reduce heat to medium-low and pour in the heavy cream, scraping up any flavorful browned bits left in the pan. Stir in the freshly grated Parmesan cheese and cook for about 2 minutes until the sauce melts and thickens slightly.
  4. Combine and Serve: Return the steak to the pan briefly to soak up the Parmesan cream sauce. Finish by topping with fresh herbs and an extra pat of butter if desired. Plate the steak, spoon the sauce over it, and serve immediately with your choice of sides.

Notes

  • Let steak come to room temperature for 20-30 minutes before cooking to ensure even doneness.
  • Use a heavy-bottomed pan and get it very hot for a perfect sear and crust.
  • Rest the steak after cooking before slicing to keep it juicy and tender.
  • Use freshly grated Parmesan cheese for the best melting texture and flavor.
  • Always use unsalted butter to control the salt level in the dish.
