Ingredients

Scale

Steak Bites

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • Salt and pepper, to taste

Garlic Butter

  • 4 tbsp unsalted butter, divided
  • 3 cloves garlic, minced, divided

Parmesan Alfredo Sauce

  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Reserved pasta water, as needed

Pasta

  • 8 oz large pasta shells

Seasonings and Garnish

  • Salt and pepper, to taste
  • Optional Italian herbs (such as basil, thyme, or Italian seasoning)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Pasta Shells: Bring a large pot of salted water to a boil and cook the large pasta shells according to the package instructions until al dente. Drain and set aside, reserving a little pasta water to loosen the Alfredo sauce if needed later.
  2. Cook the Garlic Butter Steak Bites: Pat the steak bites dry with paper towels to promote a good sear. In a large skillet over medium-high heat, melt 2 tablespoons of butter and add half of the minced garlic until fragrant. Add steak bites, seasoning with salt and pepper, and cook until browned on all sides and just cooked through, about 3-4 minutes. Remove from the pan and keep warm.
  3. Make the Parmesan Alfredo Sauce: In the same skillet, add remaining 2 tablespoons butter and the other half of minced garlic, cooking gently until fragrant. Pour in heavy cream and bring to a simmer. Slowly whisk in freshly grated Parmesan cheese until smooth and creamy. Season with salt and pepper to taste. Add a splash of reserved pasta water if the sauce is too thick.
  4. Combine Shells with Alfredo Sauce: Gently fold the cooked pasta shells into the Alfredo sauce until evenly coated, letting the pasta soak up the creamy sauce.
  5. Plate and Serve: Layer the creamy Parmesan Alfredo shells on plates and top generously with garlic butter steak bites. Garnish with freshly chopped parsley for a vibrant finish.

Notes

  • Dry steak bites thoroughly to ensure a perfect sear instead of steaming the meat.
  • Use freshly grated Parmesan cheese for a smoother melt and richer flavor.
  • Do not overcook the pasta; aim for al dente for optimal texture.
  • Keep Alfredo sauce at a low simmer to prevent cream from curdling.
  • Reserve pasta water to loosen and enrich the Alfredo sauce as needed.
