Instructions

  1. Caramelize the Onions: Melt butter in a large skillet over medium heat. Add the thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring often, for 25 to 30 minutes until the onions turn golden brown and caramelized, developing a deep sweet flavor.
  2. Prepare the Creamy Sauce: Sprinkle the flour over the caramelized onions, stirring continually for 1 minute to remove the raw flour taste. Gradually whisk in the milk and heavy cream, stirring constantly until the sauce thickens to a smooth and velvety consistency. Season with salt, pepper, and minced garlic. Add fresh thyme if desired.
  3. Slice the Potatoes: While the sauce simmers, wash, peel, and slice the potatoes thinly and evenly, ideally using a mandoline for uniform layers that cook evenly.
  4. Assemble the Layers: Lightly grease a baking dish with butter. Arrange a layer of potato slices on the bottom. Spoon over some of the caramelized onion cream sauce, then sprinkle a handful of shredded Gruyère cheese.
