Ingredients

Scale

Main Ingredients

  • 1 cup freshly grated carrots
  • 1 cup rolled oats
  • 1012 Medjool dates (pitted)
  • 1/2 cup walnuts or pecans
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened shredded coconut (optional)

Instructions

  1. Prepare the Ingredients: Peel and finely grate fresh carrots. Soak Medjool dates in warm water for a few minutes if they are firm to soften them.
  2. Blend the Base: In a food processor, combine the softened dates, rolled oats, and nuts. Pulse until the mixture becomes crumbly but sticky enough to hold together.
  3. Add Carrots and Spices: Transfer the oat-date mixture to a bowl and stir in the grated carrots, cinnamon, nutmeg, and vanilla extract. Mix thoroughly to evenly distribute the flavors.
  4. Shape the Balls: Scoop small portions of the mixture and roll them between your palms into bite-sized balls. For added texture, roll the balls in shredded coconut or crushed nuts if desired.
  5. Chill Before Serving: Place the balls on a tray and refrigerate for at least 30 minutes to firm up and allow the flavors to meld.

Notes

  • Use freshly grated carrots and soft dates for the best texture and flavor.
  • Pulse the mixture in short bursts to keep some oat and nut texture.
  • Adjust sweetness by adding more dates or a touch of honey if preferred.
  • Store in an airtight container to keep them moist and fresh.
  • Experiment with spices like ginger or cardamom to vary the flavor.
