Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, combine rolled oats, chopped nuts, baking soda, salt, and any optional spices or dried fruits you wish to include. This will create the crunchy base of your cookies.
  3. Combine Wet Ingredients: In a separate bowl, whisk together nut butter, honey or maple syrup, and vanilla extract until the mixture is smooth and well combined to add sweetness and moisture.
  4. Blend Together: Pour the wet mixture into the dry ingredients and stir until all components are evenly coated and the dough holds together when pressed, forming a crumbly but cohesive batter.
  5. Shape Cookies and Bake: Scoop tablespoon-sized portions onto the prepared baking sheet and gently flatten each mound into a cookie shape. Bake for 12 to 15 minutes until edges are golden brown and centers are set.
  6. Cool Completely: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool fully, helping them firm up and achieve the perfect crunch.
