Ingredients

Fruit & Nuts

  • Dried Mixed Fruit (raisins, sultanas, chopped apricots) – 250g
  • Chopped Nuts (optional) – 75g

Wet Ingredients

  • Butter (softened) – 175g
  • Brown Sugar – 175g
  • Eggs – 3 large

Dry Ingredients & Spices

  • Self-Raising Flour – 225g
  • Ground Cinnamon – 1 tsp
  • Ground Nutmeg – 1/2 tsp
  • Ground Cloves – 1/4 tsp
  • Orange Zest (fresh) – zest of 1 orange

Instructions

  1. Prepare Your Ingredients and Oven: Preheat your oven to 160°C (320°F). Grease a rectangular baking tray with butter or line it with parchment paper. Measure out all ingredients to have them ready.
  2. Soften the Butter and Mix with Sugar: In a large bowl, cream the softened butter with the brown sugar until light and fluffy. This step creates a tender crumb and evenly distributes the sugar.
  3. Incorporate Eggs One at a Time: Add the eggs gradually, beating well after each addition to maintain an airy batter that will rise well during baking.
  4. Add Flour and Spices: Sift the self-raising flour with cinnamon, nutmeg, and cloves, then gently fold into the wet mixture. Avoid overmixing to keep the cake light and soft.
  5. Fold in Dried Fruit, Nuts, and Orange Zest: Stir in dried fruits, chopped nuts, and fresh orange zest evenly throughout the batter to ensure festive flavors in every bite.
  6. Bake and Cool: Pour the batter into the prepared tray and level the surface. Bake for 40-45 minutes or until a skewer inserted in the center comes out clean. Allow to cool completely in the tray before slicing.

Notes

  • Use room temperature butter and eggs for better mixing and texture.
  • Spread batter evenly in the tray for uniform baking and to avoid burnt edges.
  • Choose high-quality dried fruits for maximum flavor and moistness.
  • Fold ingredients gently to keep the traybake light instead of dense.
  • Start checking your cake a few minutes early as oven temperatures vary.
