This quick and versatile recipe transforms everyday potatoes into bite-sized golden delights with a perfect balance of creamy softness and crispy exterior, suitable for any meal and easily adaptable for various dietary needs.

Ingredients

Scale

Potatoes

  • 2 pounds Russet or Yukon Gold potatoes, peeled and cut into chunks

Butter and Cream

  • 4 tablespoons unsalted butter, softened
  • 1/4 cup heavy cream or milk, warmed

Binders and Seasonings

  • 2 large egg yolks
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Prepare the Potatoes: Peel the potatoes and cut them into evenly sized chunks. Boil them in salted water for 15-20 minutes until fork-tender to ensure uniform cooking and smooth mashing.
  2. Mash Until Smooth: Drain the potatoes thoroughly and mash them while still hot using a potato ricer or masher. Avoid lumps to achieve the silky texture essential for Duchess Potatoes.
  3. Mix in Butter, Cream, and Seasonings: Gently fold in softened butter, warmed cream or milk, egg yolks, salt, pepper, and optional nutmeg. Stir thoroughly to create a creamy but firm mixture that will hold its shape when piped.
  4. Pipe the Potatoes: Transfer the mixture into a piping bag fitted with a star tip. Pipe decorative swirls or mounds onto a parchment-lined baking sheet to give an elegant appearance.
  5. Bake Until Golden and Crisp: Bake in a preheated oven at 425°F (220°C) for 15-20 minutes until the edges are light golden and crisp while the interiors remain creamy.

Notes

  • Use starchy potatoes like Russet or Yukon Gold for the fluffiest texture and best shaping ability.
  • Avoid overmixing the potatoes to prevent a gluey or dense consistency.
  • Warm the cream and butter before adding to maintain the potatoes’ temperature and consistency.
  • Egg yolks are essential for binding and golden color; for egg-free versions, use cornstarch slurry or vegan egg replacers.
  • Piping the potatoes with a star tip improves presentation and helps create crisp edges when baked.
