Instructions

  1. Prepare the Ingredients: Trim any excess fat from the chicken breasts. Finely chop the onion and garlic. Set aside the sun-dried tomatoes and fresh herbs to ensure easy layering in the crockpot.
  2. Layer and Add to Crockpot: Place the chicken breasts at the bottom of the crockpot. Add the chopped onions, minced garlic, sun-dried tomatoes, red pepper flakes, salt, and pepper on top. Pour in the chicken broth, making sure the chicken is fully covered for even cooking.
  3. Slow Cook: Set the crockpot to low and cook for 5 to 6 hours, or until the chicken is tender and can be easily shredded with a fork. This slow cooking allows flavors to meld and the meat to become very tender.
  4. Shred Chicken and Add Orzo: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and stir in the orzo pasta. Continue cooking on low for an additional 15 to 20 minutes, or until the orzo is al dente.
