Ingredients

Scale

Meat and Broth

  • 3 to 4 lbs Beef Chuck Roast
  • 4 cups Beef Broth
  • 4 Garlic Cloves, peeled
  • 1 packet French Onion Soup Mix
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Fresh Thyme or 1/2 tsp Dried Thyme

Sandwich Assembly

  • Crusty Sandwich Rolls (6-8 rolls)
  • 6 to 8 slices Provolone or Swiss Cheese

Optional Variations (Not required)

  • Sliced Jalapeños or Hot Sauce for spice
  • Rosemary or Oregano as herb alternative
  • Seitan or Mushrooms and Vegetable Broth for vegetarian option
  • Mozzarella, Fontina, or Pepper Jack cheese alternatives
  • Gluten-Free Rolls and certified gluten-free soup mix/broth

Instructions

  1. Prepare the Beef: Trim excess fat from the chuck roast, then season lightly with salt and pepper to enhance its natural flavor before placing it in the crockpot.
  2. Mix the Broth and Seasonings: In a bowl, combine beef broth, garlic cloves, French onion soup mix, Worcestershire sauce, and thyme. Stir well to blend and infuse the au jus with deep, rich flavors.
  3. Cook Low and Slow: Pour the broth mixture over the roast in the crockpot. Cover and cook on low for 8 hours or until the beef is fork-tender and easily shredded.
  4. Shred the Beef: Remove the roast and let it rest a few minutes. Shred into bite-sized pieces using two forks. Return the beef to the crockpot to soak up the remaining juices.
  5. Assemble the Sandwiches: Cut the sandwich rolls in half and layer generously with shredded beef. Top each with slices of provolone or Swiss cheese, allowing the cheese to melt slightly from the meat’s heat.
  6. Serve with Au Jus: Pour the hot au jus into small bowls for dipping. Serve the sandwiches alongside for an authentic French dip experience.

Notes

  • Choose the Right Cut: Chuck roast is ideal for slow cooking due to its marbling and texture.
  • Layer Flavors: Don’t skip the French onion soup mix as it adds savoriness that transforms the broth.
  • Low and Slow Cooking: Cooking on low yields juicier, more tender beef than higher heat settings.
  • Rest Before Shredding: Allow the roast to rest a few minutes after cooking to make shredding easier.
  • Warm Rolls: Slightly toast sandwich rolls before assembling to prevent sogginess.
