Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese (full-fat or low-fat, well-drained)
  • 1/4 cup grated parmesan cheese
  • 2 tbsp almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 12 tsp olive oil (for drizzling)

Optional Variations

  • 1/4 tsp cayenne or chili powder (for spicy kick)
  • 1/4 tsp dried oregano, thyme, or rosemary (for herb infusion)
  • Cashew cheese or vegan cheese alternatives (for vegan version)
  • Sunflower seed flour (to replace almond flour for nut-free option)
  • Sharp cheddar or smoked gouda (instead of parmesan for different flavor)

Instructions

  1. Preheat Your Oven and Prepare the Baking Sheet: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Mix the Ingredients: In a bowl, combine the cottage cheese, parmesan cheese, almond flour, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the Chips: Using a spoon, dollop small, evenly spaced mounds of the mixture onto the baking sheet. Flatten each mound gently to form thin, chip-like discs for maximum crispiness.
  4. Drizzle with Olive Oil: Lightly brush or drizzle olive oil over each chip. This helps them become golden and extra crispy during baking.
  5. Bake Until Golden Brown: Bake for 15–20 minutes, keeping a close eye on the chips. Remove once they turn a nice golden color and feel firm and crispy to the touch.
  6. Cool and Serve: Allow chips to cool completely on a wire rack before serving to let them crisp up further and avoid sogginess.

Notes

  • Drain Excess Moisture: Use well-drained or thick cottage cheese to avoid soggy chips.
  • Even Thickness: Flatten chips uniformly to ensure they bake evenly and crisp up perfectly.
  • Use a Cooling Rack: Cooling on a wire rack prevents steam buildup and keeps chips crunchy.
  • Experiment with Flavors: Try different spices or cheese blends to keep this snack fresh and exciting.
  • Oven Temperature: Don’t lower the heat or chips won’t crisp; keep it consistent for best results.
