Ingredients

Scale

Main Ingredients

  • 2 cups fresh broccoli, finely chopped
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 cup breadcrumbs (use gluten-free breadcrumbs if needed)
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or cooking spray, for baking

Instructions

  1. Prepare the Broccoli: Chop fresh broccoli into very fine pieces. Lightly steam or blanch the broccoli for about 2-3 minutes until just tender but still slightly crisp. Drain and pat dry completely with a kitchen towel or paper towels to remove any excess moisture. Allow to cool.
  2. Mix the Filling: In a large bowl, combine the cooled broccoli with shredded sharp cheddar cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix thoroughly to ensure even seasoning and that the mixture binds well.
  3. Shape the Poppers: Use your hands or a small scoop to form the mixture into bite-sized balls or oval shapes. Press them firmly to help them hold together without crumbling.
  4. Coat with Breadcrumbs: Roll each shaped popper thoroughly in breadcrumbs until fully coated. This will create the crispy outer crust essential to the poppers’ signature texture.
  5. Cook to Crispy Perfection: To bake, preheat the oven to 400°F (200°C) and place poppers on a greased or parchment-lined baking sheet. Lightly spray or brush with olive oil. Bake for 20-25 minutes, turning halfway through until golden and crispy. Alternatively, shallow fry in hot oil until golden brown and crisp, then drain on paper towels.

Notes

  • Dry your broccoli well after steaming to prevent soggy poppers.
  • Use sharp cheddar cheese for maximum flavor.
  • If frying, avoid overcrowding the pan to ensure even cooking and crispiness.
  • Freeze shaped poppers for 10 minutes before coating and cooking for easier handling.
  • Homemade or panko breadcrumbs create a lighter, crispier crust.
