Ingredients

Scale

Cheese and Dairy

  • 1 cup freshly grated Parmesan cheese
  • ½ cup heavy cream (optional)

Vegetables & Aromatics

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 medium potatoes, peeled and diced

Liquids

  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Herbs & Spices

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Your Vegetables: Start by finely chopping onions, garlic, carrots, and celery. Peel and dice the potatoes into small chunks to ensure they’ll cook evenly and blend smoothly.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onions and garlic, cooking until they are soft and fragrant but not browned, to build a mellow base flavor.
  3. Add Vegetables and Broth: Stir in carrots, celery, and potatoes, then pour in the chicken or vegetable broth. Toss in fresh rosemary and thyme sprigs, and allow everything to simmer until the vegetables are tender.
  4. Blend and Create Creaminess: Remove herb stems, then use an immersion blender to puree part of the soup directly in the pot, leaving some chunks for texture. Gently stir in the grated Parmesan cheese and a splash of heavy cream if desired for extra richness.
  5. Season and Serve: Finish by seasoning with salt and freshly ground black pepper. Serve hot, garnished with extra Parmesan or fresh herbs for an inviting presentation.

Notes

  • Use freshly grated Parmesan for best flavor and smooth melting.
  • Simmer gently after adding cheese to prevent curdling or graininess.
  • Adjust broth and potato quantities to achieve your preferred soup consistency.
  • Use fresh herbs whenever possible for bright, authentic taste.
  • Partial blending preserves a rustic texture and pleasant contrast in the soup.
