Ingredients

Shrimp

  • Peeled and deveined medium shrimp – about 1 lb

Garlic Sauce

  • Fresh garlic cloves, minced – 3 to 4 cloves
  • Butter – 2 tablespoons
  • Heavy cream – 1 cup
  • Chicken broth – 1/2 cup (use gluten-free if needed)
  • Parmesan cheese, freshly grated – 1/3 cup
  • Salt – to taste
  • Black pepper – to taste
  • Red pepper flakes – a pinch (optional)

Rice

  • White rice – 1 cup (uncooked)

Garnish

  • Fresh parsley, chopped – 2 tablespoons

Instructions

  1. Prepare the Rice: Start by cooking the white rice according to the package instructions. For a fluffier texture, rinse the rice in cold water before cooking to remove excess starch. Set aside once done.
  2. Sauté the Shrimp: Heat butter in a large skillet over medium-high heat. Add the shrimp, seasoning lightly with salt and pepper, and cook for 2-3 minutes per side until pink and just cooked through. Remove shrimp from the skillet and set aside to prevent overcooking.
  3. Make the Garlic Sauce: In the same skillet, reduce heat to medium and add minced garlic. Sauté for about a minute until fragrant, careful not to burn it. Pour in the chicken broth and heavy cream, stirring constantly to combine and let it simmer gently for 3-4 minutes.
  4. Add Cheese and Seasonings: Stir in grated Parmesan cheese until melted and incorporated into the sauce. Season with a pinch of salt, pepper, and red pepper flakes if desired. Let the sauce thicken slightly, stirring frequently.
  5. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet, coating them thoroughly in the creamy garlic sauce. Cook together for another 1-2 minutes just to reheat the shrimp and meld the flavors.
  6. Serve Over Rice: Place a generous scoop of cooked white rice on each plate and top with the creamy garlic shrimp. Sprinkle chopped fresh parsley for garnish and serve immediately.

Notes

  • Use fresh or properly thawed shrimp for best texture.
  • Don’t overcook shrimp to avoid rubbery texture.
  • Simmer cream sauce gently to prevent splitting or curdling.
  • Grate Parmesan cheese fresh for better melting and flavor.
  • Adjust red pepper flakes gradually to control spice level.
