Ingredients

Scale

Protein

  • 2 boneless chicken breasts or thighs, cooked and shredded

Base & Aromatics

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Dairy

  • 1 can (14.5 oz) diced tomatoes with juices
  • 4 cups chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup freshly grated Parmesan cheese

Carbohydrates

  • 1 cup pasta (penne or rotini recommended)

Seasonings & Herbs

  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Chicken: Cook the chicken breasts or thighs in a skillet with a splash of olive oil, seasoning with salt and pepper. Cook until golden brown and thoroughly cooked through. Remove from heat, shred the chicken using two forks, and set aside.
  2. Sauté Aromatics: In the same pot or a large soup pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes. This creates the flavorful base for the soup.
  3. Create the Soup Base: Add the diced tomatoes with their juices, chicken broth, and Italian seasoning to the pot. Stir to combine and bring to a gentle boil. Let it simmer for about 10 minutes to meld the flavors.
  4. Cook the Pasta: Add the pasta directly into the simmering soup. Cook according to package instructions until al dente, stirring occasionally to prevent sticking.
  5. Add Cream and Cheese: Lower the heat to low, then slowly stir in the heavy cream and grated Parmesan cheese. Stir until the soup is creamy and smooth. Add the shredded chicken back into the pot and warm through for 2-3 minutes, taking care not to boil to avoid curdling.
  6. Season and Serve: Taste and adjust seasoning with salt, pepper, and additional Parmesan as desired. Garnish with fresh basil or parsley. Ladle into bowls and enjoy the comforting warmth of the soup.

Notes

  • Use freshly grated Parmesan for better melting and flavor over pre-grated cheese.
  • Do not overcook the pasta; add it near the end and cook until just tender to avoid mushy texture.
  • Simmer gently after adding cream to prevent the broth from splitting.
  • Prepare chicken and broth base ahead of time for quicker assembly before serving.
  • Adjust thickness by adding pasta water or broth if the soup becomes too thick.
