Ingredients

Scale

Filling Ingredients

  • 8 oz fresh lump or shredded crab meat, rinsed and drained
  • 4 oz cream cheese, softened
  • 23 fresh jalapenos, finely chopped (adjust to taste)
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 2 green onions, finely chopped

Assembly & Cooking

  • 1012 egg roll wrappers
  • Vegetable or canola oil for frying (about 2 cups)
  • Water (for sealing wrappers)

Instructions

  1. Prepare the Filling: Rinse and drain the crab meat to remove excess moisture. In a mixing bowl, combine the crab meat with finely chopped jalapenos and green onions. Add softened cream cheese, shredded cheese, and garlic powder. Mix everything thoroughly until smooth, creamy, and evenly blended.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface. Place about two tablespoons of the filling near one corner. Fold the edges in and roll tightly to enclose the filling. Seal the final edge with a dab of water to keep the egg roll secure during cooking.
  3. Cook Until Golden: Heat vegetable or canola oil in a fryer or skillet to 350°F (175°C). Carefully place each rolled egg roll into the hot oil. Fry for about 2-3 minutes per side, or until golden brown and crisp. Remove and drain on paper towels to remove excess oil.
  4. Serve Warm: Serve the egg rolls immediately while crispy and melty inside. Pair with your favorite dipping sauces such as creamy ranch, sweet chili, or spicy sriracha mayo for added indulgence.

Notes

  • Don’t overfill the wrappers to prevent bursting during cooking.
  • Moisten the wrappers’ edges with water to seal properly and keep them intact while frying.
  • Ensure the oil is heated to the right temperature (350°F) before frying for a crispy texture without excess grease.
  • Drain the fried egg rolls on paper towels immediately to keep them crunchy.
  • Use fresh jalapenos for the best heat and flavor; avoid dried or pickled jalapenos.
