Ingredients

Scale

Main Ingredients

  • 4 cups potatoes, peeled and cut into chunks (Russet, Yukon Gold, or red potatoes)
  • 1 large onion, diced
  • 23 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk (or coconut milk for vegan option)
  • 2 tablespoons butter or olive oil
  • 1/4 cup fresh dill, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Base: Heat butter or olive oil in a large pot over medium heat. Add the diced onions and minced garlic. Sauté until fragrant and softened, about 5 minutes, creating a flavorful foundation for the soup.
  2. Add Potatoes and Broth: Add the potato chunks to the pot and pour in enough broth to just cover them. Bring the mixture to a boil, then reduce heat to a simmer. Cook until the potatoes are fork-tender, about 15 to 20 minutes.
  3. Season and Add Dill: When potatoes are tender, stir in fresh chopped dill, salt, and black pepper. The dill adds a bright, herbaceous note that lifts the soup’s flavor.
  4. Add Cream and Adjust Texture: Reduce heat and slowly pour in the cream or milk, stirring gently to combine. For a chunkier soup, leave the potatoes whole. For smoother texture, gently mash some chunks with a spoon. Adjust seasoning as needed.
  5. Simmer and Serve: Let the soup simmer gently for another 5 minutes to meld the flavors. Ladle into bowls and garnish with fresh dill sprigs, a swirl of cream, or crunchy croutons if desired. Enjoy warm.

Notes

  • Use fresh dill rather than dried for the best vibrant flavor.
  • Choose potatoes according to desired texture: Russets for fluffier soup, Yukon Golds or reds to hold chunks well.
  • Do not overcook potatoes; keep them tender but firm to preserve chunkiness.
  • For extra creaminess, add a dollop of crème fraîche or sour cream before serving.
  • Add salt gradually to avoid oversalting, especially if using store-bought broth.
