Filling

  • Green food coloring (a few drops) or 2 tablespoons finely chopped fresh herbs (parsley, dill, or spinach)

  • 1/4 cup chopped red bell peppers or pimentos
  • 2 tablespoons chopped chives or parsley
  • 2 tablespoons shredded cheese (cheddar or similar) or small pieces of yellow bell pepper

Instructions

  1. Boil and Cool the Eggs: Place your eggs in a pot, cover them with cold water, and bring to a gentle boil over medium heat. Once boiling, turn off the heat and cover the pot for about 10-12 minutes. Transfer eggs to an ice bath immediately to stop cooking and make peeling easier.
  2. Peel and Slice the Eggs: Carefully peel the cooled eggs and slice each one in half lengthwise. Remove the yolks and place them in a mixing bowl, setting the whites aside on a serving plate arranged in the shape of a Christmas tree—stack the halves with pointed ends facing inward to form the silhouette.
  3. Prepare the Filling: Mash the yolks with mayonnaise, Dijon mustard, vinegar or lemon juice, and season well with salt and pepper. Add green food coloring or finely chopped herbs to achieve a vibrant tree color. Mix until smooth and creamy.
  4. Fill the Egg Whites: Pipe or spoon the green yolk mixture into each egg white half generously, smoothing it out to resemble pine branches.
  5. Decorate Like a Christmas Tree: Sprinkle finely chopped red bell peppers or pimentos over the filled eggs to mimic ornaments. Use shredded cheese or small triangles of yellow bell pepper to form little stars or garlands at the top of each “tree.” Finally, scatter chopped chives or parsley for extra greenery and a fresh finish.
