Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F/43°C)
  • 1/4 cup granulated sugar (plus a pinch for yeast activation)
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 2 large eggs

Filling Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: Warm the milk to lukewarm (about 110°F/43°C), then dissolve the yeast and a pinch of sugar in the milk. Let it sit for 5-10 minutes until frothy. In a large bowl, combine the flour, sugar, and salt. Add the eggs, softened butter, and yeast mixture. Knead until a smooth, elastic dough forms. Cover and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Make the Filling: While the dough rises, mix the peanut butter, cocoa powder, brown sugar, and vanilla extract until smooth and spreadable, creating the gooey filling.
  3. Roll Out and Fill: After the dough has doubled, punch it down and roll it out on a floured surface into a large rectangle. Spread the filling evenly over the dough, leaving a small border around the edges. Roll tightly from the long side into a log shape.
  4. Slice and Arrange: Slice the log into 1 to 1.5 inch thick pieces using a sharp knife. Place the slices cut-side up in a greased baking dish with little space between. Cover and let rise again for 30-45 minutes until puffy.
  5. Bake and Cool: Preheat oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown and cooked through. Let cool slightly before serving to allow the filling to set.

Notes

  • Ensure milk is warm, not hot, to activate yeast properly.
  • Do not skip the second rise for the softest rolls.
  • Use creamy peanut butter for better spreadability and melting.
  • Lightly flour the work surface to prevent sticking without drying the dough.
  • Use an oven thermometer for consistent baking temperature.
