Perfect for weeknight dinners, this classic dish is ready in under 30 minutes, uses simple ingredients, and offers balanced nutrition with family-friendly mild flavors.

Ingredients

Beef and Vegetables

  • Thinly sliced flank or sirloin beef – 12 oz
  • Broccoli florets – 4 cups (about 1 large head)

Sauce

  • Soy sauce – 3 tbsp
  • Oyster sauce – 2 tbsp
  • Beef broth or water – 1/4 cup
  • Brown sugar – 1 tsp
  • Minced garlic – 2 cloves
  • Minced fresh ginger – 1 tbsp

Marinade and Cooking

  • Cornstarch – 1 tbsp
  • Vegetable oil – 2 tbsp
  • Sesame oil (optional) – a few drops

Instructions

  1. Prep the Ingredients: Slice the beef thinly across the grain for tenderness. Cut broccoli into bite-sized florets. Mince fresh garlic and ginger.
  2. Marinate the Beef: In a bowl, combine soy sauce, cornstarch, and a small splash of vegetable oil. Coat the beef slices well and marinate for about 10 minutes to lock in juiciness and enhance texture.
  3. Blanch the Broccoli: Boil broccoli in salted water until vibrant green and slightly tender, about 1-2 minutes, then immediately transfer to ice water to stop cooking and retain crispness and color.
  4. Stir-Fry the Beef: Heat vegetable oil in a wok or large skillet over high heat. Quickly sear the beef in batches until browned on the outside but still tender inside, about 1-2 minutes per batch. Remove beef and set aside.
  5. Prepare the Sauce: In a bowl, mix soy sauce, oyster sauce, beef broth, brown sugar, minced garlic, and ginger until combined.
  6. Combine and Finish: Return the cooked beef to the skillet. Add the blanched broccoli and pour the sauce over. Toss everything together and cook until the sauce thickens and coats each piece, about 1-2 minutes. Finish with a drizzle of sesame oil if desired.

Notes

  • Slice beef thinly to ensure quick cooking and tenderness.
  • Cook beef in batches to avoid overcrowding the pan and steaming.
  • Use fresh garlic and ginger for the best flavor impact.
  • Blanching broccoli with an ice water shock preserves color and crunch.
  • Marinate beef briefly to improve texture and flavor absorption.
  • Optional garnishes: toasted sesame seeds or sliced green onions for added crunch and aroma.
  • Substitute tofu or seitan to make a vegetarian version.
  • Use tamari or gluten-free soy sauce and check oyster sauce to make it gluten-free.
