Instructions

  1. Prepare the Grits: Cook quick-cooking grits according to package instructions, stirring in butter and a pinch of salt until creamy and thick enough to hold shape. Let cool slightly to help the bites hold together better.
  2. Cook the Shrimp: Season shrimp with garlic powder, smoked paprika, salt, and pepper. Sauté in butter over medium heat until pink and just cooked through. Chop into bite-sized pieces for even distribution.
  3. Combine Ingredients: In a large bowl, mix the cooked grits, chopped shrimp, shredded cheese, chopped green onions, and beaten eggs. If desired, gently fold in breadcrumbs for extra crunch.
  4. Shape the Bites: Using your hands or a small scoop, form the mixture into bite-sized balls, pressing firmly so they hold together during cooking.
