Ingredients

Scale

Main Ingredients

  • 1 large head of firm, fresh cauliflower with tight florets
  • 23 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 cup grated cheese (sharp cheddar or mozzarella recommended)
  • 2 tablespoons fresh parsley or chives, chopped (for garnish)

Instructions

  1. Prepare the Cauliflower: Remove the leaves and trim the base so the cauliflower sits flat on your cutting board. Using a large sharp knife, carefully slice the cauliflower into 1-inch thick steaks from top to bottom. You should get about 2-3 steaks; save remaining florets for another use.
  2. Season the Steaks: Place the cauliflower steaks on a parchment-lined baking sheet. Drizzle olive oil evenly over each steak, then sprinkle with salt, pepper, and garlic powder to infuse simple but irresistible flavors.
  3. Roast or Grill the Steaks: Preheat your oven to 425°F (220°C). Roast the cauliflower steaks for 15-20 minutes, until edges begin to turn golden. Alternatively, cook on a hot grill pan for similar caramelization and smoky aroma.
  4. Add the Cheese and Finish Cooking: Remove the steaks briefly and generously top each with grated cheese. Return to the oven or grill and cook for another 5 minutes, until the cheese melts and bubbles beautifully.
  5. Garnish and Serve: Sprinkle fresh parsley or chives on top for color and freshness. Serve immediately while hot and gooey.

Notes

  • Choose a large cauliflower head for thicker, more impressive steaks that hold together better.
  • Slice carefully with a sharp chef’s knife to avoid breaking the steaks.
  • Use olive oil generously to help steaks crisp and prevent burning.
  • Do not overcrowd the baking sheet; give steaks space for even roasting.
  • Use sharp-flavored cheese like aged cheddar for enhanced taste without extra seasoning.
  • Leftovers keep up to 3 days refrigerated in an airtight container; reheat gently in the oven at 375°F (190°C).
  • Cauliflower steaks can be frozen up to 2 months when wrapped tightly after roasting and cooling.
