Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and fluffy. Add the egg and sour cream or Greek yogurt, mixing until fully combined. Set aside.
  2. Make the Cookie Dough: In a large bowl, cream together softened butter with granulated and brown sugars until light and fluffy. Beat in vanilla extract and eggs one at a time until smooth. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips.
  3. Assemble the Cookies: Scoop out a tablespoon of cookie dough and flatten into a disc. Place a tablespoon of cheesecake filling in the center. Carefully wrap cookie dough around the filling, sealing edges completely to prevent leakage. Place stuffed dough balls on a lined baking tray spaced evenly.
  4. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake cookies for 12-15 minutes, or until edges are golden but tops remain soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
