Ingredients

Scale

Chicken and Protein

  • 4 boneless skinless chicken breasts

Filling

  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tablespoon ranch dressing mix
  • 1 teaspoon garlic powder
  • 2 green onions, chopped
  • 3 tablespoons buffalo sauce, divided

Seasoning and Cooking

  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Filling: In a medium bowl, combine softened cream cheese, shredded cheddar cheese, ranch dressing mix, garlic powder, chopped green onions, and 2 tablespoons of buffalo sauce until fully mixed to create a creamy, flavorful stuffing.
  2. Butterfly the Chicken: Carefully slice each chicken breast horizontally about three-quarters through, creating a pocket without cutting all the way through.
  3. Stuff the Chicken: Spoon the buffalo ranch filling generously into each chicken pocket and press the edges firmly to seal and prevent the filling from leaking during cooking.
  4. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden brown, locking in the juices.
  5. Bake Until Cooked Through: Transfer seared chicken breasts to a baking dish and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Drizzle With Extra Buffalo Sauce: Before serving, drizzle the cooked chicken with the remaining buffalo sauce for an added kick and enhanced presentation.

Notes

  • Even Chicken Thickness: Pound chicken breasts evenly for uniform cooking and ease of stuffing.
  • Seal Properly: Use toothpicks if needed to secure chicken pockets and prevent filling leakage.
  • Don’t Overstuff: Overfilling can cause the stuffing to spill out during cooking.
  • Check Internal Temperature: Use a meat thermometer to ensure chicken is cooked to safe 165°F (75°C).
  • Let It Rest: Allow chicken to rest for 5 minutes after baking for juicier results and flavor melding.
