Ingredients

Scale

Main Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1 to 1.5 inch cubes
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil or cooking spray
  • 810 wooden or metal skewers

Optional Variations

  • 1/2 tsp cayenne pepper or chili flakes for spicy kick
  • 1 tbsp mixed dried herbs (thyme, oregano, rosemary) for herb infusion
  • Grated Parmesan cheese to mix with breadcrumbs for cheesy delight
  • Gluten-free flour and gluten-free breadcrumbs (almond flour or crushed rice crackers) as substitutes
  • Marinade ingredients: 1 cup buttermilk, yogurt, or lemon juice for tenderizing

Instructions

  1. Prepare the Chicken: Cut chicken breasts into even 1 to 1.5 inch cubes to ensure consistent cooking. Pat dry thoroughly with paper towels to help the coating adhere better.
  2. Set Up the Breading Station: Arrange three shallow bowls: one with flour seasoned with 1/2 tsp salt and 1/4 tsp pepper; second with beaten eggs; third with panko breadcrumbs mixed with garlic powder and paprika (add optional herbs, chili flakes, or Parmesan if desired).
  3. Bread the Chicken Pieces: Lightly coat each chicken cube with the seasoned flour, then dip fully into the beaten eggs. Finally, roll in the breadcrumb mixture, pressing gently to form an even crust. Place coated pieces on a clean plate while breading the rest.
  4. Thread onto Skewers: Carefully thread 3 to 4 breaded chicken pieces onto each skewer. Space them snugly but not too tight to allow heat circulation during cooking.
  5. Cook the Skewers: For baking, preheat oven to 400°F (200°C). Lightly grease a baking sheet and arrange skewers evenly. Bake for 20-25 minutes, turning once halfway through until golden brown and cooked through. Alternatively, pan-fry in a skillet over medium heat with olive oil, cooking 4-5 minutes per side until crisp and cooked.

Notes

  • Cut chicken pieces uniformly for even cooking and optimal texture.
  • Pat chicken dry before breading to prevent soggy coating.
  • Press breadcrumbs gently but firmly to keep crust intact during cooking.
  • Use panko breadcrumbs for superior crunch compared to regular breadcrumbs.
  • Lightly coat breaded chicken with oil or cooking spray for golden brown crispiness whether baking or frying.
  • Allow skewers to rest a few minutes after cooking to lock in juices and cool slightly for easier eating.
