Instructions

  1. Prepare the Cheesecake Mixture: Beat the softened cream cheese in a mixing bowl until smooth and fluffy. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated and creamy. Gently fold in mashed fresh blackberries evenly throughout the mixture.
  2. Shape the Pops: Using your hands or a small cookie scoop, form the cheesecake mixture into approximately one-inch balls. Place each ball on a parchment-lined tray. Insert a lollipop stick halfway into each ball, then refrigerate for about 30 minutes to firm up before dipping.
  3. Prepare the Coating: Melt the white or dark chocolate in a microwave-safe bowl or double boiler until smooth and silky. Have the graham cracker crumbs ready in a separate bowl for rolling.
  4. Dip the Pops: Carefully dip each chilled cheesecake ball into the melted chocolate, ensuring full coating. Let any excess chocolate drip off, then immediately roll the pop in graham cracker crumbs for added crunch and flavor. Place the coated pops back on parchment paper.
