Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (lean or regular)
  • 12 oz rotini pasta
  • 34 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Optional Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the Rotini: Bring a large pot of salted water to a boil and cook the rotini until al dente, about 8-10 minutes. Drain and set aside, reserving a little pasta water for adjusting sauce consistency if needed.
  2. Brown the Ground Beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and season lightly with salt and pepper. Cook, breaking it apart, until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  3. Prepare the Garlic Parmesan Sauce: In the same skillet with the beef, add butter and minced garlic. Sauté for 1-2 minutes until fragrant. Pour in the heavy cream and reduce heat to medium-low. Stir in Italian seasoning and freshly grated Parmesan cheese, whisking continuously until the cheese melts and the sauce thickens, about 3-4 minutes.
  4. Combine Pasta and Sauce: Add the cooked rotini into the skillet with the beef and garlic Parmesan sauce. Toss gently to coat each piece of pasta evenly. If the sauce is too thick, loosen it with reserved pasta water a tablespoon at a time.
  5. Final Touches: Season with extra salt and pepper to taste. Garnish with chopped fresh parsley for color and freshness. Serve immediately while warm and creamy.

Notes

  • Use freshly grated Parmesan for better melting and flavor.
  • Do not overcook the pasta; al dente holds cream sauce best.
  • Reserve pasta water to adjust sauce consistency naturally.
  • Season gradually with salt to avoid over-salting.
  • Brown beef thoroughly to develop deeper flavor.
  • Keep sauce on low heat to prevent curdling and maintain smoothness.
